Why Is My Coffee Maker Making Watery Coffee?

If your drip coffee tastes like brown water, it is almost never one big thing. It is usually two or three small ones stacked on top of each other. The fixes below are the common ones, in the order I would try them.

This post is about a standard drip machine, the kind with a carafe and a basket. If you have a Keurig, we have a separate post: Why is my Keurig making watery coffee?. Go there instead.

First, check your ratio

This is the biggest cause, so start here. A good working range is 1 part coffee to 15 to 18 parts water by weight. At 1:16, that is about 62 grams of coffee per liter of water. Most people use far less.

A coffee maker "cup" is often just 5 or 6 ounces, not 8. If you fill the reservoir to the 12-cup line and add 6 scoops, you are probably making 60 ounces of water with a weak dose. Weigh the water and weigh the coffee once. You will see it.

Fix 1: Use more coffee

Raise the dose until you are at about 1:16. For a full 12-cup pot (about 1,775 g of water), that is around 110 g of coffee. For a smaller pot, scale down. If you want it stronger, go to 1:15.

Fix 2: Grind a little finer

If the grind is too coarse, the water rushes through and picks up little. For a flat-bottom basket, use a medium grind, like coarse sand. If your coffee is weak even at the right ratio, go a touch finer. Too fine and it clogs or turns bitter, so make small changes.

Fix 3: Grind it fresh

Stale coffee tastes thin and papery no matter what you do. Whole bean ground right before brewing makes a bigger difference than most upgrades. Pre-ground coffee goes flat much faster because so much more surface is exposed to air. Store beans airtight, cool and dark. We have a guide on how to store coffee.

Fix 4: Check the water temperature

Drip coffee should be brewed with water between 195 and 205°F. Plenty of budget machines run cooler than that, and cool water leaves most of the flavor in the grounds. To test it, run a cycle with just water, hold a thermometer in the stream or catch some in a cup right away, and see what you get. If it is well below 195°F, the machine is the problem. Better machines, including ones certified by the SCA, are designed to reach the range.

Fix 5: Descale

Limescale builds up inside the machine, especially with hard water. It slows the flow and can keep the water from reaching temperature. Run a descaling solution, or equal parts white vinegar and water, through a full cycle, then rinse with two or three cycles of plain water. Do this every month or two if your water is hard.

Fix 6: Level the grounds and use the right filter

Uneven grounds let water carve a channel through the basket and skip most of the coffee. Give the basket a shake to level the bed. Make sure the paper filter fits and is not folded over, and rinse it first.

Fix 7: Do not brew less than the machine is built for

Some machines do not distribute water well at small volumes. If you make a half-pot, the water may run through too fast. Brew near the machine's normal capacity, or use a smaller brewer.

One quick cleanup

Coffee oils and minerals build up on the carafe and basket and add stale, bitter flavors that people mistake for weakness. Wash them with soap and water after use.

How I would troubleshoot it

To be honest, I would go in this order. First, weigh your coffee and water. Second, grind fresh. Third, go a little finer. Fourth, test the water. Fifth, descale. If it is still weak after that, the machine may just be tired, and a new one that reaches temperature is a better investment than a coffee upgrade.

FAQ

How much coffee should I use for 12 cups?

About 110 g at 1:16 for a full 60 oz pot. Machine cups are usually 5 to 6 oz, so check your markings.

Why is my coffee weak even with the right amount?

The grind may be too coarse, the beans may be stale, or the machine may not be heating to 195°F.

Does a dirty coffee maker make coffee weak?

It can. Scale slows flow and lowers temperature, and old oils make the cup taste stale.

What is the best grind for a drip machine?

Medium, like coarse sand. Go a little finer if the coffee is weak.

Should I use filtered water?

It helps if your tap water has a strong chlorine taste or is very hard.
