Direct answer. Fill the bottom chamber with hot water to just below the safety valve, fill the basket level with a fine grind, a step coarser than espresso, and heat on medium-low until the coffee flows. Take it off the heat when it starts to gurgle, usually within about 5 minutes. It makes strong coffee, though not true espresso.

Recipe card

Dose Fill the basket level, do not tamp. The pot sets the dose.
Water Fill to just below the valve
Ratio Set by the basket and pot size; far stronger than drip
Grind Fine, a step coarser than espresso
Temperature Start with hot (not boiling) water; medium-low heat
Time Usually within about 5 minutes

Steps

  1. Heat water in a kettle. Starting hot keeps the grounds from baking while the pot warms.
  2. Fill the base to just below the valve. Do not cover the valve.
  3. Add coffee to the filter basket. Level it with your finger. Do not tamp.
  4. Screw the top on tightly, using a towel because the base is hot.
  5. Set on medium-low heat with the lid open. Coffee should rise slowly in a steady stream.
  6. When the stream turns pale and the pot gurgles, remove it from the heat and run the base under cold water to stop the brew.
  7. Stir and serve right away.

Troubleshooting

  • Bitter or metallic. Heat too high or the pot stayed on the burner too long. Lower the heat and pull it earlier.
  • Weak. Grind too coarse or basket not full.
  • Sputters, spits. Heat too high.
  • Nothing comes up. Grind too fine, basket overpacked or the seal is blocked.

Wash by hand with water only or a mild soap. Do not use a dishwasher on an aluminum pot.

FAQ

Is moka pot coffee the same as espresso?

No. A moka pot works at roughly 1 to 2 bar, while espresso machines reach about 9 bar. It is strong, but different.

What grind should I use?

Fine, but a step coarser than espresso. Espresso-fine can clog the filter.

Can I use it on an induction stove?

Only if the pot is induction-compatible, usually stainless steel.

Why does mine taste burnt?

High heat and leaving it on after it gurgles. Use low heat and remove it early.

How much coffee does a "3-cup" pot make?

Roughly 150 ml, about 5 oz, depending on the brand. The "cups" are espresso-sized.
