Roasted to order

Roasted to order means your coffee isn't roasted until you buy it. Fresh doesn't mean minutes out of the roaster, though. Coffee needs a few days to release carbon dioxide before it brews well. Ours is usually roasted within 48 hours of your order and reaches you about 7 days after roasting.
From your order to your cup
- You place the order. It goes into a roast queue.
- It gets roasted. Orders are roasted in the order they're received, usually within 48 hours.
- It ships. Your coffee ships 1 to 3 days after roasting.
- It arrives. Most bags are in your hands about 7 days from roast.
- You drink it. Whole bean, sealed, kept cool and dark, a bag stays good for about a month.
Why just-roasted isn't the goal
Roasting traps a lot of carbon dioxide inside the bean. As soon as coffee comes out of the roaster it starts letting that gas out, fast for the first few days and then slower over the next couple of weeks. That's called degassing.
If you brew coffee that's still full of gas, the gas gets in the way. Water has trouble getting into the grounds evenly, the bloom on a pour-over balloons up and keeps bubbling, and the cup can taste sharp, thin or a little sour. Give it a few days and the gas settles down, water extracts the coffee evenly, and you start tasting what's actually there.
So the freshest coffee and the best-tasting coffee aren't the same thing. There's a window.
The window
Here's the general guidance most of the specialty world works from. It isn't a law, and different coffees behave differently.
- First 2 to 3 days after roast: still gassy. Drinkable, not at its best.
- Roughly days 4 to 14: for drip and pour-over, this is usually where coffee tastes its best. Espresso often does better toward the back half of this, since pressure brewing is more sensitive to gas.
- Weeks 2 to 4: still good coffee if it's stored right. Aromatics fade slowly.
- After about a month: whole bean keeps going flatter. Not unsafe, just less of what you paid for.
Ground coffee is a different story. Grinding exposes far more surface area to air, and ground coffee loses aroma noticeably within hours, not weeks. If you can grind right before you brew, do it.
Our actual timing
When you order, your coffee goes into a roast queue. Orders are roasted in the order they come in, usually within 48 hours. Your bag ships 1 to 3 days after roasting and is in your hands about 7 days from roast. That puts it right in the window when it shows up.
Now, to be honest about one thing: there's no roast date printed on our bags, because it doesn't fit Temecula Coffee Roasters' workflow. I'm not going to tell you there is. What I can tell you is the timing above, and that nothing sits on a warehouse shelf waiting for you.
How long a bag stays good
About a month, if you keep it whole bean, sealed, cool and dark. A few things that help:
- Keep the bag closed tight, or move the beans to an airtight, opaque container.
- Store it at room temperature, away from the stove, the window and the top of the fridge.
- Don't keep an open bag in the fridge. Coffee picks up moisture and smells from everything else in there.
- If you buy the 5 lb bag, split it into smaller airtight portions and only open one at a time. Sealed portions can go in the freezer; the storing coffee page explains how to do it without letting moisture in.
FAQ
What does roasted to order mean?
It means your coffee is roasted after you order it, not pulled from a pre-roasted stockpile. Ours goes into a roast queue and is usually roasted within 48 hours.
Is freshly roasted coffee better?
Not on day one. Coffee needs a few days to release carbon dioxide before it brews evenly, so the best-tasting window usually starts a few days after roast.
How fresh is Honorguard coffee when it arrives?
About 7 days from roast. That's usually right in the window where it tastes its best.
Is there a roast date on the bag?
No. A printed roast date doesn't fit Temecula Coffee Roasters' workflow. The timing above is what you can count on.
How long does a bag of coffee stay good?
About a month, whole bean, sealed, kept cool and dark. Ground coffee fades much faster.
Should I store coffee in the fridge?
No. An open bag in the fridge picks up moisture and odors. Room temperature, airtight and out of the light is better.
